Last week, I received the sweetest, most awesome gift in the mail:

a gift certificate for a house cleaning.

Ser.i.ous.ly.

I teared up.

So kind. So appropriate.

Someone took extraordinary compassion on me and sent me the most thoughtful gift accompanied by the most encouraging note.

The other incredible part: it was sent anonymously.

No one wanted credit for this gift.

No one wanted to be recognized as sweeping in to save the day. (because really: a lifesaver!)

No one was seeking pay back or gifts in return.

I was so humbled.

On my last post, it wasn't intentional to pour my heart out seeking sympathy or praise--rather, it was to check in and justify the blogging absence.

Yet, you awesome girls and some anonymous giver went out of your way to pour in encouragement.

Wow.

I am so very blessed by the body of Christ God has surrounded me with. (again, preposition?)

Humbled. Encouraged. Motivated.

Hello, Blog World

There are so many post ideas swirling in my mind and passing in fleeting thoughts.

Sadly, there is no time to get them organized and posted.

Such is life.

Four kids are a lot of little people to take care of. Did you know that?

Do you like sentences ending in prepositions? Me neither. Oh well.

Anyway...our lives are full, blessed, and the days are going by super quickly.

I've felt like we've been on an unending marathon of activities lately. Only it's the marathon where you run around from thing to thing like a chicken with your head cut off, but there are absolutely no real exercise or weight loss benefits from this sort of marathon. Oy. Not a lot of sleep involved in the marathon, for that matter, either.

So, someday I'm sure life will slow down and favorite memories, activities, recipes, pictures, and fun times will be posted. Someday.

For now, I have to leave you with one of the most touching, well done documentaries from John Piper.
(No, he's not related to Peter Piper, Carson. Yes, he's a little older, but he's also still alive, Cloe. No, we don't know him, McClain. Can we just take the 18:44 to watch this? Thank you.)

There's a new love in our house...

Our family loves fresh salsas!

Recently, we found a new, yummy looking fresh salsa recipe on Pinterest.

Tapatio was the mystery ingredient.

We sent Cody off to the store in search of the new hot sauce.

He returned. Success!

We chopped, diced, sprinkled and stirred.

Our mouths were watering. Could this be as tasty, delicious as we were all hoping?

Yes! Success!

Try it! Definitely a keeper! Thanks, Tapatio! We love you!

Chunky Avacado Salsa

original recipe found here

1 avacado
2 tomatoes
1 small can or 1 cup frozen white corn
1 can black beans
Green onions
Cilantro
Garlic salt
Tapatio sauce

Chop up your tomatoes and avacados. Drain and rinse corn and black beans. Dice up the green onions and cilantro.
(Really, just use as much of all the above ingredients as your family likes!)
Toss together. Season with garlic salt and Tapatio sauce.

Enjoy with tortilla chips...or just by the spoonful!

The Big Birthday Party!

For months and months and months (literally), our boys have been dreaming and planning for their first big "friend" birthday party...
a pirate party!

We invited mateys from each of their classes to a playground center for treasures and adventures.

Yo-ho! We weren't lacking with either!

T' party was a lot 'o fun!

Here are a few tips party tips we learned along the way:

*If a theme can be nailed down far in advance, appropriate invitations, decorations, and loot bags can be picked up on clearance as stores switch out merchandise.

*Renting a play facility for a flat rate is totally worth the money when it comes to entertaining a large group of ~~rowdy~~ energetic boys--there was no wear and tear on our home and the clean-up was all left behind!

*Making and decorating birthday cakes that your children love will not kill you. Promise. After searching Pinterest (of course), I followed the directions here for the little pirate guy cake and took ideas from here for the pirate ship.

*Two cakes baked in oval casserole dishes and layered make the perfect shape for a pirate ship! No hard cutting or shaping involved! Stack on a glass cutting board for a sturdy platform. (Make your favorite boxed cake mix with milk instead of water and you'll end up with a cake that tastes superb!)

*Buttercream frosting is super easy and much more delicious than frosting in a can. The faithful red-checked cook book says to make buttercream frosting like this:

Beat 1 stick butter (at room temperature) until fluffy.

Add 2 cups powdered sugar and beat.

Pour in 1/4 cup milk and 1 tsp. vanilla. Mix well.

Beat in 2 more cups powdered sugar and beat until light and fluffy.

For chocolate buttercream frosting, add 1/4 c. cocoa powder. Delicious.

*Cakes that are frozen are much easier to decorate! Use a toothpick to draw lines for the ship boards in the frosting. Embellish with candy, cookies, or anything that could resemble parts of a ship or a pirate! Get creative!

*Small character toys are inexpensive but add a super polished, fun look to any cake!

(Yes, this is pirate cake numero dos. We had one on their real birthday and one for their party. I like the second one best. Practice makes almost perfect!)

*Boys have a lot a lot a lot of energy. Next time, rethink inviting 21 little boys to party. Cuh-ray-zee.

*Lastly, cherish every.single.chaotic moment. They only turn six once!

Can you believe this beautiful weather?

If you're not from Iowa, we've been enjoying crazy, record-breaking warm temperatures lately.

It may just be a coincidence, but when our boys were born six years ago, we also experienced an unseasonably mild winter. I was super leery of carrying babies on ice and snow was petrified of falling in slippery parking lots in the freezing temperatures. So, back then, the warmer weather was a huge answer to prayer. And guess what, it's just as much an answer to prayer this time--with just one baby to carry! Sorry...we're done having babies, so next year, it's probably back to snow and ice. Haha!

Here's what we've been up to:

Oh wait,
there's been no regular schedule here on this blog since our little man showed up!

He sure is cute, though!

Anyway...thanks to a fantastic government teacher in high school, who I am just now really appreciating to the fullest, I occasionally get a little geeky spark of enthusiasm for politics.
This enthusiasm especially sparks every four years at caucus time. Living in Iowa, the caucus is BIG NEWS because we hold our caucus first in the nation.

(All you other states, edging in on us: back off. Seriously, you've got mountains, oceans, beaches, waterfalls. We've got lots of corn and the first caucus. Let it be. Let it be.)

I digress...

So here's a quick look at the fun we've had around here with the Iowa Caucus:

Our venue for the caucus was moved to an events center to accommodate over 1,200 people. There were media people swarming like crazy! Several of our neighbors were interviewed by CBS, CNN, Rutgers, and a news station from Dallas (hello, Rick Perry). Maddox even got a little snuggle from Soledad O'Brien, an anchor from CNN! She took a big 'ol whiff of his sweet baby head and said, "I love the smell of babies!" Too bad my camera was stuck in the back of the stroller.

After each of the candidates was represented with a little speech from a local resident, our precinct got a surprise visit from Rick Perry. He was very suave with his southern drawl. Unfortunately, he placed fifth in our precinct. Sort of felt bad for the guy after going to all that work to charm us in person.

As we were waiting to drop our ballets in the box, a very sweet elderly couple complimented our children on their nice behavior at the caucus. They asked our children who they were rooting for. Carson got a really snide look on his face and said sharply, "Barack Obama!" Nice, kid.

The old lady teasingly said, "Oh, we don't say that name here, young man!" Well played, nice lady!

Today, the media and politicians began flooding out of our area. However, we did catch this live broadcast from the MPR at our coffee shop right before our Bible Study. Pretty nifty!

Lastly, I wanted to catch a picture of the hotel really near our house where all the news satellite trucks parked. I happened to be ~~stalking~~ passing through the parking lot just as Michelle Bachmann's bus pulled up for her to deliver her withdrawal speech. I sat perched in my vehicle trying to capture a picture of the famous gal. She's there--I promise!

So there you have it: a glimpse at the Iowa Caucus!

Lots of candidates, information, phone calls, signs, debates: politics.

Fun to experience, but now...back to my regularly scheduled life!

You have to know, sweet boys, every year on your birthday, I comically breathe an inward sign of relief that we've somehow kept you alive for another year.

You daily test the limits of your safety

by fearlessly climbing trees,

energetically running down the cracked, uneven sidewalks,

furiously riding your scooters and bailing into the grass to stop,

rapidly riding your bikes down the sloped driveway toward the street--turning only at the last second,

intensely (yet somehow lovingly) beating each other with anything remotely shaped like a sword,

sprightly hanging from the swing set with jump ropes turned lassos,

nimbly jumping and diving at every possible opportunity.

You both, as they say, are ALL BOY.

And I love it!

McClain, you are absolutely as sweet as they come. You love to plant surprise kisses on my cheek and still unashamedly hold on to my hand anytime we're out and about. You have a tender heart and care deeply for your whole family. We pray you will continue to grow in confidence and be unafraid of what others think of you. Your approval is found in Christ alone. We're so thankful you asked Jesus to be your Savior just last week and claimed His forgiveness for your sins. God has good plans for your life, McClain. We are humbled God has chosen us to be your parents. We love you!

Carson, you are so energetic and completely full of wittiness. We are always guaranteed a good laugh when you're around. You are a natural protector and always stand your ground. You have a fierce love for your family and show it well with tight, quick hugs. We pray you will guard yourself from pride in your own strength and abilities and place your confidence totally in Christ. You already have an understanding of salvation and those wheels are continuously turning as you soak up God's Word. God has good plans for you, Carson! We are humbled that God chose us to be your parents, too! We love you!

Apricot Memories!

When I was growing up, some special family friends would always bring out a plate of Christmas goodies. (My friend reminded me that all the kids also always had to sing several Christmas carols as their mom handed us our cookies! Fun times!)
My favorite things on the plate were the apricot cookies. I had never been able to find a recipe for these cookies but thought of them every Christmas! When I flipped through my December issue of Rachael Ray's magazine and saw the recipe for Apricot Cheesecake Pockets, I was so excited to have finally found something close to my childhood memory! They are delicious! We may or may not be on our second double batch...for family friends, of course!

Apricot Pockets

2 cups flour
1 tbsp. granulated sugar
1/4 tsp. salt (optional)
12 oz. cream cheese, at room temperature
2 sticks (8 oz.) unsalted butter, at room temperature
1 egg, lightly beaten
1/2 cup apricot jam
1 1/4 cups confectioners’ sugar
Gold sparkling sugar, for decorating

In a medium bowl, whisk the flour, granulated sugar and salt.
Using an electric mixer, beat 8 oz. cream cheese and the butter on medium-high speed until fluffy, 1 minute. Beat in the flour mixture on low speed. Divide the dough in half; place each half on a large piece of plastic wrap. Using the wrap to help, form the dough into disks and seal. Chill the dough until firm, at least 1 hour.
Meanwhile, in a small bowl, mix half the beaten egg into the remaining 4 oz. cream cheese. Stir 1 tsp. water into the remaining egg. Chill both the cream cheese mixture and the egg wash.
Position racks in the upper and lower thirds of the oven; preheat to 350°. Line 2 cookie sheets with parchment. Working on a floured surface, roll out 1 disk of dough 1/4 inch thick. Using a 4-inch round cutter, cut out the cookies and place on the pans. Repeat with the remaining dough disk. Reroll any scraps and cut out enough cookies to total 24.
Transfer 1 of the pans to the refrigerator. Working with the other pan, place 1 tsp. of the cream cheese mixture and 1 tsp. jam in the center of each cookie. Using a pastry brush, coat the cookie edges with the egg wash; fold over the filling. Using the back of a fork, seal the edges. Brush the tops with egg wash. Place the pan in the refrigerator; repeat with the remaining cookies.
Bake the cookies until golden, 16 to 18 minutes. Transfer to a rack; let cool.
In a medium bowl, whisk the confectioners’ sugar with 2 tbsp. water. Working over the parchment, drizzle the cookies with the glaze. Sprinkle with the sparkling sugar. Let the glaze set.

*I do some without the cream cheese filling and use raspberry preserves--Cody's favorites!

Coconut Snowballs!

These coconut cookies are a perfect blend of a soft, chewy butter cookie and a coconut macaroon! Yum! They vanish quickly!

Coconut Snowballs
(Adapted from Martha Stewart's Everyday Food 2004)

1 package (14 ounces) sweetened shredded coconut (5 1/3 cups)
1 cup sugar
1/4 teaspoon baking powder
1/2 cup chilled unsalted butter, cut into small pieces
1 egg
1 teaspoon vanilla
1 1/2 cups all-purpose unbleached flour

Preheat oven to 350. Set aside 2 loosely packed cups of coconut in a bowl. Place remaining coconut in a food processor along with sugar, and baking powder; process until finely ground. Add butter, and process just until no large lumps remain. Add egg and vanilla; process just until smooth. Add flour; pulse until a crumbly dough begins to form, scraping sides of bowl as needed (do not overmix).

Scoop tablespoons of dough, roll into balls, and coating with coconut.

Arrange balls on baking sheets. Bake until lightly golden, 23 to 25 minutes (or less). Cool on baking sheets 1 to 2 minutes; transfer to a wire rack to cool completely.

*To make sure the cookies have a light texture, do not overprocess the dough; it should still be slightly loose and crumbly when you start forming the balls.

Bite size Pecan Pies? Yes, please!
These Pecan Tassies are the perfect way to enjoy the gooey, deliciousness of pecan pie as a little neat treat!

Pecan Tassies

Crust:
1 cup butter (room-temperature)
6 ounces cream cheese (room-temperature)
2 cups all-purpose flour

Filling:

1½ cups brown sugar
1 heaping cup chopped pecans
2 eggs
2 tablespoons butter, melted
1 teaspoon vanilla extract

Preheat oven to 350 degrees. Place muffin liners in mini muffin tins.

For the crusts, mix the butter, cream cheese and flour together. Shape into a disk, wrap in plastic wrap, and chill in the refrigerator for an hour.

On a floured surface, roll dough out to about 1/4 in. thickness. Use a small round cookie cutter and cut dough. Bend into cup shape and place in lined muffin tin.

To make the filling, mix brown sugar, pecans, eggs, butter and vanilla. Scoop about a tablespoon into each muffin cup.

Bake for 20 to 25 minutes or until the tops are set. Let cool for a few minutes in the muffin tin, and then remove to a cooling rack to cool completely. The tassies can be frozen or stored in an airtight container at room temperature.

Tonight, Cody and I got to see one of our favorite bands in concert! Rend Collective Experiment did an acoustic concert in a small church not too far from us. It was fantastic!

Check out Rend Collective Experiment! They are an Irish group that is shaking up the music world with genius, fresh lyrics that reflect the message of Jesus Christ! We love them!

Here's a quick peek at one of my favorite things from our neighborhood party last night--Christmas Cookies with the Criggers! (clever, yes? what's that? corny? yes...)

This idea is one of those rare, really awesome pinterest worthy ideas that popped into my head while getting ready for our party. I needed some way to label the cookies. I remembered that I had purchased some blingy napkin rings to use as party invites for Cloe's birthday someday (an idea copied and tucked away from somewhere). I ~~obsessed forever over the perfect fonts~~ quickly printed appropriate labels and slipped them in the frames on the napkin rings. They were so sparkly and fun!

Baby It's Cold Outside!

Woo! It is COLD outside! Time to pull out all the hats, scarves, mittens (or mitten if you're five and have already lost one at school...boo!), boots, snow pants, and coats and stock up on good soup recipes! It's like we get so frozen we have to just slurp our food off of spoons during the winter! Then we thaw out in the spring and fire up our grills again! Okay, so maybe it's not that bad...

This chili recipe is from the October issue of Everyday Food. It's got a super smokey chili flavor and is chili in the literal sense--only chilies involved here, no tomatoes! The only big change I made to the recipe was with the meat. I just had two pounds of good quality steaks in the freezer, so that's what we used. It's a little bit of a spicy soup but can be tamed down by adding extra beef broth.

Heather's Red Texas Chili

(I snapped a quick picture of Cody's second bowl full!)

1 1/2 ounces dried guajillo chiles (we found these in a BIG bag at Walmart in the produce section for around $3)
1 chipotle chile in adobo sauce, plus 1 tablespoon sauce
Coarse salt and ground pepper
1 tablespoon vegetable oil
2 pounds boneless beef, cut into 1-inch pieces
1 medium white onion, diced small
4 garlic cloves, smashed and peeled
1 teaspoon ground cumin
1 teaspoon dried oregano
2 tablespoons cornmeal
3 3/4 cups low-sodium beef broth

Directions
Place guajillos in a large bowl, cover with boiling water, and weight with a small plate to keep submerged. Let sit until pliable, 15 minutes. Reserve 1 cup soaking liquid. Drain guajillos; discard stems and seeds. In a blender, blend guajillos, chipotle chile and sauce, and soaking liquid until smooth, about 2 minutes, scraping down side as needed. Pour mixture through a fine-mesh sieve set over a medium bowl, pressing on solids; discard solids. Set chile puree aside.

Heat a heavy pot over medium-high. Add oil to pot, season beef with salt and pepper, and cook until browned, about 5 minutes (do not crowd pot; work in batches if necessary). Transfer to bowl.

Reduce heat to medium and add onion, garlic, and 1/2 cup water. Cook, stirring and scraping up browned bits with a wooden spoon, until onion is translucent, about 3 minutes. Add cumin, oregano, and cornmeal and cook until fragrant, 1 minute. Add meat, broth, chile puree, and just enough water to cover meat, if necessary; bring to a boil over high. Partially cover, reduce heat, and simmer 1 hour. Uncover and cook until meat is tender and chili is slightly thickened, 30 to 45 minutes.

Top with crushed tortilla chips, avocado, shredded cheddar cheese, and diced onions!

Thankful...

Well, I definitely didn't stay quite on track with my little Thankful project!

Here are a few highlights as we finish off the month:

Last Sunday, Cody had the awesome opportunity to baptize Cloe! We are so very thankful for her desire to follow Jesus!

We spent Thanksgiving with all of Cody's family in southern Iowa. I am thankful for these two little cousins--just a year apart. They are both so sweet and laid back. Guess they're leaving all the orneriness for the older kids!

The weather was beautiful on Thanksgiving Day! Grandpa had a fun little project going on in his backyard. The kids thought they were pretty big stuff getting to move dirt! Soon, they'll be enjoying electricity in the clubhouse Grandpa is building!

ALL the cousins had so much fun together! I am truly thankful for family!

Now on to December...phew!

I realize I've started to fall behind quickly on these thankful posts! Life is full right now! Here we go...

Day 16: I am really thankful that God provided a perfect fit with a little babysitting job two mornings a week. Not only is the schedule perfect, but really, the boys are perfect, too! I love them! It's been fun to watch three little guys--ages 4 months, 1 year and 2 years old--all react and play off each other!

Day 17: We are all so thankful for the kids' elementary school! Parent / Teacher Conferences went really well! We think we have the best teachers in the whole school, and we're pretty proud of our kids' accomplishments, too! A huge answer to prayer was hearing that Cloe has just taken off with a love for reading and sticks her nose in a book anytime she's given a chance during school!

Day 18: I am thankful for both my parents and Cody's parents. The more we work with families, I realize what a special privilege it is to have all of our parents living and also thriving in strong marriages. We so appreciate that our parents are always willing and eager babysitters! They also help us in so many others ways...we are blessed!

AND NOW FOR THE BIG ONE TODAY!
Day 19: We are all thankful for our TWO NEW NEPHEWS! My sister's family adopted two sweet little boys today on National Adoption Day! I put into motion some stellar tear-holding-back-moves this morning during the hearing at the courthouse. My favorite phrase of the day was when my brother-in-law was being read a list of things by the judge and the judge said, "Their forever father." These two sweet little boys will never need to fear the things that have happened to them in the past. Their new family is their forever family. We love them so much! I couldn't be more proud of my sister! Maddox is quite fond of her, as well! He wore his JOY outfit in love for Aunt Joy! (Sorry Aunt Katie, Aunt Denise, and Aunt Calli...if we can find outfits with your names bedazzled on them, we will buy them, too!)

Phew...that was just the beginning of our packed weekend! Stay tuned!

Catching up!

Day 12: I am thankful for fun family times on little day trips!

Saturday, we headed out bright and early for a quick trip to Ikea in Minneapolis, Minnesota. Some Christmas surprises were in stock there and needed to be picked up.

Woo-hoo! Swedish Meatballs and fun, inexpensive surprises waited ahead!

Of course, we couldn't drive all that way without a quick loop around the Mall of America!

Lego Woody just makes everyone excited! The American Girl Store brought so much excitement that I forgot to take a picture!

Eight hours in the car + five hours shopping = one happy, tired family!

Day 13: I am so thankful for the independence and responsibilities these three sweeties can handle!

Sunday nights we host a small group of young married couples in our home--a.k.a. no kids allowed. At 7:00, our kids are responsible to take showers, get their pajamas on, brush their teeth, pick up their toys, read a Bible story, pray together, and get themselves in bed. (all without too much noise!) They have done this so amazingly well for the last nine weeks! At the end of the evening when our guests leave, I always look at Cody just stunned that our children were able to accomplish such tasks with no problems and no conflicts. We both are so thankful that they are willing to participate in this way in the ministry we are having with young couples! Okay...enough mama bragging! :)

Day 14: I am SO thankful for Christmas music!

Day 7: I am so thankful for Mondays!

I realize for most people, Monday is the most dreaded day. For us, Monday is Cody's day off. I actually think Monday is my favorite day of the week! During the summer, we try to always do something special with the kids on Mondays. Since school has started, we've tried to make this day a super fun "together" day. We've snagged some great Groupons and Living Social Deals to help with that! I sometimes sneak in a few other things...like Maddox's well-baby checks and shots. Who wouldn't want help with those appointments!?

What day of the week are you most thankful for?

PS Maddox did not get the memo Saturday night. In fact, he started Sunday at 5:00 am. Painful, really. Today was 6:00 am. We're hoping tomorrow will be back to 7:00 am! For the grandmas: he now weighs 14 lb. 10 oz. (40th percentile) and is 26 1/2 in. long (90th percentile). Crazy, we might have a giant in our family!

Day 6: I am so thankful for this:

You know how they say a picture is worth a thousand words?
Well, this one really is!

I am so thankful for our church--as in all these people! LOVE THEM! Seriously. So many really awesome testimonies, friendships, talents, and life stories all coming together. Love.

I am thankful for the worship that we get to have together! Singing together for HIM! It's great! LOVE our talented, dedicated musicians.

I am thankful that my children eat.up being here. Even at 7 am on Sunday, they are all smiles. (the donuts probably help!)

I am also thankful for this building. It's such a beautiful facility! (even if it does sit out in the middle of a corn field! for real!)

Most of all, in this picture, I'm thankful that this is our life. Cody is the guy leading the worship here. I love his job, and he does too!

Day 5: Another milestone...Maddox, we're thankful for another month with you in our family!

You are four months old today!

You smile and drool...and drool and drool and drool!

You laugh and coo and talk to us in your own sweet little gibberish!

You aren't rolling yet (like your brothers and sister did at this age),
probably because you have three adoring little people always at your beck and call.

I'm okay with this, too.
I'll savor your dependency as I know it will be fleeting all too soon!

You have a grip that's as tight as a kung-fu fighter.

You stand strong on those little legs and can plank with the best of them! (Daddy's pride and joy!)

Day 4: I am thankful for children that are willing to work hard and help out!

Since Maddox was born, our kids have been really pulling a lot of extra weight around the house. Blame it on having a baby...a c-section...four kids...lack of sleep...laziness...whatever...I just cannot seem to get my act pulled together again and get things done like I use to!

Every fall, we always hit an orchard and load up on apples. This year, time was fleeting and a freeze was eminent when we finally made it to an orchard. To our surprise, the orchard owner said we could have as many apples as we liked as long as we used our own bags. Unfortunately, I had only one flimsy shopping bag and Cloe's piano bag in the car that day. So, we headed back the next day armed with large bags ready to be filled with tart, juicy apples!

I know it's dorky, but I LOVE their matchy matchy puffy coats!

When we'd picked all the apples we could reach from the ground, these two little monkeys scrambled up the branches for more! Cloe and I stood at the bottom while they plunked apples down for us to catch.

This was the best part--after letting the apples simmer all night in the crock pot, our little team formed an assembly line. Cloe was the smasher, Carson was the dipper, and McClain was the "host" who ordered more dipping and smashing. (Can you tell they love game shows?) Of course, everyone had to take a turn at each job. The reward for helping was a heaping bowl of fresh, hot applesauce!

(Even Maddox got to sample some...shhhh!)

Our freezer is full of applesauce ready to be enjoyed all throughout the winter thanks to some really sweet, helpful kiddos!

Day 3: I am so thankful that this little girl is turning into a bookworm!

Seriously, after working so crazy hard for the last three years of school (and summer vacations), this little lady is picking up chapter books and having a hard time putting them down! I love it when she comes to tell me her alarm clock "accidentally" says an hour later than when she's suppose to put the book down and go to sleep. Yippee! There's a spark lighting up there that is nothing short of a huge answer to prayer! Hallelujah!!!

I'm jumping on the grateful train for the month of November!

Here we go!
Starting slightly shallow...

Day 1: I'm thankful for yummy caramel apples!

Our Best Bites has the most sugary, gooey, delicious recipe.

Homemade Caramel for Apple Dipping
Recipe from Bon Appétit, slightly adapted by ourbestbites.com and slightly copycatted by me...

Ingredients

1 pound dark brown sugar (about 2 cups packed brown sugar)
2 sticks unsalted butter
1 14-ounce can sweetened condensed milk
2/3 cup dark corn syrup
1/3 cup pure maple syrup
1 1/2 teaspoons vanilla extract
1 teaspoon molasses
1/4 teaspoon salt (I left this out)
12 medium sized apples (I did 3 large, 9 medium, and still had over 2 cups of caramel left)
popsicle sticks or chopsticks or forks and tongue depressors

Optional: melted chocolate in zip-top bags

Instructions

Wash and dry apples; place sticks in cores and put on a baking sheet in the refrigerator to chill.

To prepare caramel, combine first 8 ingredients in heavy 2 1/2-quart saucepan. Stir with wooden or silicone spatula over medium-low heat until sugar dissolves (no crystals are felt when caramel is rubbed between fingers), occasionally scraping down sides with a spatula, about 15 minutes.

Attach a clip-on candy thermometer to side of pan. (Or use your husband's milk steaming thermometer for lattes and hope it doesn't ruin it!) Increase heat to medium-high; cook caramel at rolling boil until thermometer registers 236°F (or 220 degrees because that's all the higher it goes...augh!), stirring constantly but slowly with clean spatula and occasionally scraping down sides of pan, about 12 minutes.

Pour caramel into a bowl. Submerge thermometer bulb in caramel. Cool to 200°F, about 20 minutes.

Holding stick, dip 1 apple into 200°F caramel, submerging all but very top of apple. (We like them dipped all the way to the top so a little caramel pools around the top!) Lift apple out, allowing excess caramel to drip back into bowl. Turn apple caramel side up and hold for several seconds to help set caramel around apple. (should have done this step...a lot of our caramel pooled around the bottom)
If needed, gently scrape the bottom of the apple to remove excess caramel. Place coated apple on prepared baking sheet. Repeat with remaining apples and caramel, spacing apples apart (caramel will pool a bit on foil).

Drizzle melted chocolate over caramel-coated apples and sprinkle with decorations. Chill until set, about 1 hour. Cover; chill up to 1 week or wrap in cellophane bags for gift giving.

(Our Best Bites has some great tips on topping that can be added to these caramel apples, too!)

I had some extra help from this little guy. Asthma was kicking his tail, so he stayed home from school. He loved drizzling the melted chocolate over the top. This is the only picture I got of the finished products. They disappear quickly!

We bagged up three of the apples in pretty Halloween sacks and delivered them to our teachers after school. It was a perfect little gift!

Meet Elise!

Carson has a very special little girl in his kindergarten class.

Her name is Elise, and she is a sweetheart!

Elise is also a twin with her brother, Evan. So, of course, we're extra partial to her!

She has a very special story that I'd love to share with you!

Meet Elise Morgan, daughter of Brian and Wendy, twin sister to Evan, and big sister to Lauren. Elise was diagnosed with a malignant Medullary Brainstem Tumor on March 29, 2010.

After an initial prognosis of just 6-18 months, Elise underwent 6 weeks of Radiation Therapy at St. Jude Children's Research Hospital in Memphis, Tennessee.

Despite the odds, Elise's tumor shrunk nearly 25% and has shown no signs of growth for over one year! Elise is currently symptom-free and is enjoying life as a typical kindergartener!

On Saturday, November 19, along with family, friends, and classmates, we want to honor Elise at the St. Jude Give Thanks. Walk. St. Jude's is such an amazing children's hospital!

::Just heard the going rate for a babysitter for four kids is $18/hr. Seriously? At the risk of sounding like my mother, I use to babysit for $2/hr and thought I was really rollin' in the dough! (she babysat for 25 cents/hr like 100 years ago and the people had a bear in a cage in the backyard...it was probably up hill both ways, too...just checking to see if you're reading, mom!) Anybody really paying $18/hr for a sitter?

::Vanity. Cody and I decided it would be a good time to have one of my front teeth internally whitened. It had been 10 years and was getting embarrassingly gray. The problem: the partial filling holding the whitener in keeps popping out. Normally it would not be a big deal to run to the dentist for 20 minutes. However, Maddox doesn't prefer his mama out of sight in a strange office. So, with biceps of steel...errr jello...I suspend Maddox in the air: Superman style: the.entire.time.

::The other day Carson said, "Hey mom, I know what ... means! It means you really had a lot more words to say but felt kind and left them out!" Boy, am I ever kind...

::Pinterest. Need I say more? Try these. The blogger says they are like crack balls. While I've never tried crack (I'm sure you're all relieved), they are seriously delicious, and we polished off a batch much faster than I'd like to admit.

Our Dapper Dude

Saturday, we had a crazy, busy line up of events.

McClain had a birthday party at 1:00.

Family pictures at 2:00.

McClain had another birthday party at 4:15.

Cloe had a church bonfire at 6:00.

I had a dinner at 6:30.

Plus we had to run to the mall to deal with our phones quickly.

We pretty much just stayed on the go from 12:45 on...

Surprisingly, it was all going very well.

We were staying on schedule--even Maddox was doing awesome--eating in the car, napping in his car seat, and just being a good happy baby.

I fed Maddox at 4:15 while Cody took McClain into Chow's Gymnastics for his second birthday party.

Cody said all the kids yelled, "Hi McClain!" He seemed excited for another birthday party!

When Cody ran in to pick up McClain from the party at 5:45, it seemed to take them a really long time to come out to the car.

When they finally appeared, Cody got in and said, "Well, that was awkward. I somehow dropped McClain off at the wrong birthday party!"

McClain had gotten invited to a birthday party for a little girl from his class at school.

However, another little boy from his class also had a party going on at the same time (we didn't know this little fact).

Cody said he wasn't for sure which room to take McClain, but when everyone started saying "Hi McClain!" in the first room, they just went in. Cody said since they all knew McClain, he didn't even think twice about it being the wrong party.

McClain didn't even notice he was at the wrong party until they were singing "Happy Birthday."

McClain told us he went to sing "Happy Birthday, dear Aya",
and everyone else sang "Happy Birthday, dear Mason".

McClain didn't know what to do, so he just sat there quietly.

(I'm sure he was wishing that he could somehow disappear!)

Soon it was time to open the gifts.

It's really popular to have the gift-giver stand next to the birthday child while they open their gift.

They had McClain go up front and stand next to Mason while he opened his gift...which was in a pink bag.

McClain said he acted very hesitant because he knew it was a girl gift.

He even tried to tell them the gift was for a girl, but they just encouraged him to go on up with his gift!

Mason began to pull out the gift and tried to leave it in the bag when he saw it was girly.

However, McClain said all the adults encouraged him, "Pull it out!!! Let's see McClain's gift!"

So he pulled it out: a super girly, flowery shirt that said in large letters, "Flowers make me smile."

McClain said it was then that everyone really laughed.

Poor Mac!

Cody came in shortly after that to pick up McClain.

Cody was so embarrassed when McClain said, "Hey, you dropped me off at the wrong party!"

He apologized profusely for leaving our son at a party to which he wasn't invited.

The parents were really kind about it.

Cody was able to get the girly gift to the right room and the little girl.

Then he and McClain slunk to the car...the party crasher's walk of shame.

Mason's mom did send us a really nice email and encouraged us not to feel bad. Her son really likes McClain and was glad he was there. She actually thought they had invited McClain.

Still...so embarrassing!

Today, when school was dismissed, we were there waiting with a boy gift.

We plan to double check the identity of the birthday person at all parties

These kids

melt.my.heart.

It probably comes as no surprise, Maddox is not lacking in the attention department! He's the motivating factor in getting dressed quickly for school, in finishing dinner, in cleaning bedrooms, in completing homework...whatever the task, whenever it's finished, it's playtime with baby! (and baby loves it!)

The kids are so determined to teach Maddox how to play peek-a-boo. I'm not sure he's completely caught on--he smiles at them no matter what they're doing!

Speaking of peeking...nice transition, yes?

We tried this Rachael Ray crock-pot dinner recipe this week and loved it! For her original recipe, click on the recipe name. Here's our version...it was yummy!

No Peeking Peking Chicken

4 bone-in chicken hind quarters, skin discarded
Salt and pepper
3/4 cup chopped onion
4 cloves garlic, chopped
1/4 cup soy sauce
3 tbsp. honey
1 tbsp. grated fresh ginger
1/4 tsp. sesame oil

1/4 c. chopped green onions, for garnish

Season the chicken with salt and pepper and place in a greased 6- to 7-qt. slow cooker.

In a small bowl, combine onion, the garlic, soy sauce, honey, ginger and sesame oil. Pour the mixture over the chicken, cover and cook on low heat until the chicken is tender (6 hours).
Serve with the pan juices, basmati rice, and sprinkled with green onions.

I'm really glad I'm a grown-up.

There are a lot of perks to being a grown-up:

driving the car (love it just as much as I did at 14)

going to bed whenever I want (I want early nowadays)

drinking a soda on days other than Sunday (that was the rule growing up)

chewing gum whenever (well, whenever there's any left)

See...perks!

However, sometimes there are things that make wish I could be a kid again.

For instance: birthday parties!

Our kids have been invited to some pretty spectacular parties, but McClain's party this past Saturday really took the cake.

If you're from Iowa, you know that we are all slightly obsessed with our hometown Olympian, Gymnast Shawn Johnson.

Well, guess where the birthday party was held!

...you know, home of our Olympic Champion!

We were going to try to catch some pictures on the sly,

but we soon noticed that all the other parents were unashamedly taking pictures.

So we jumped in.

Confession: I love brown sugar.

I usually judge whether a recipe is going to be good or not based on the amount of brown sugar that will be dumped in.

lots = good

not so much = not so good

I'm pretty sure it's healthy too.

It's easy:

Brown rice: healthy

Dark chocolate: healthy

Unbleached flour: healthy

deep colored fruits and vegetables: healthy

Brown sugar: healthy

Yep, it's all pretty logical.

Brown sugar is good. You should eat a lot of it.

At least on Fat Friday.

*Tomorrow, this confession will be dissolved and all brown sugar will magically poof into natural sweeteners used in moderation.

Lunch Box Oatmeal Cookies

1 cup firmly packed brown sugar

1/2 cup butter

1 egg

1 teaspoon vanilla

1 3/4 cups uncooked rolled oats

1 cup all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1 small bag m&m's

(This recipe is so easy that the kids did it on their own!)

Heat oven to 375°F. Combine sugar, butter, egg and vanilla in large bowl. Beat at medium speed, scraping bowl often, until creamy. Reduce speed to low; add oats, flour, baking soda and salt; continue beating until well mixed.

Drop dough by heaping teaspoonfuls, 2 inches apart, onto lightly greased cookie sheets. Top with a few m&m's. Bake for 9 to 11 minutes or until edges are lightly browned. Let stand 1 minute on cookie sheets; remove to wire cooling rack.

Watch out! They go fast!

**Just wanted to add a huge THANK YOU for all your sympathetic comments and advice with the mastitis! I visited with a lactation consultant today. Turns out, there were several issues going on over the last ten weeks that were the causes of massive amounts of pain. Solutions are in place and results should be seen in the next week. PHEW! Ironically, one of the solutions involved eliminating sugar from my diet. I just died a little inside!

Maddox is the first Crigger baby to ever like the feel of grass.

He not only liked it, he smiled and cooed the whole time.

McClain is such a morning person and really wanted Carson to wake up happy, too.

He went into their room, rubbed Carson on the back, and said, "Wake up, Buddy! It's your birthday!"

The happiness worked for about two seconds with Carson, but McClain sure made the morning for the rest of us a little funnier!

I was watching Skateboarding on tv with the boys. We saw some pretty amazing tricks.

I asked Carson, "Enjoy skateboarding?"

He got the biggest scowl on his face and said, "NO!"

I asked, "Why the snarky reply?"

"AUNT JOY does not skateboard!"

Okay dokey then.

Time to tune up the 'ole hearing, buddy!

It's time for us to break up. You've been a faithful friend these last eight weeks, making my hair look as if I really had a style. You provided a smooth look when I was sleep deprived, emotional, rushed and couldn't muster up the effort to use a blow dryer. I hope you know, it's me not you. I just can't enjoy you anymore. I need clean ends and little more style. Your constant availability has been very much appreciated. You've been a lifesaver. Please don't be sad. I'm sure there will still be mornings I'll revisit your johnny-on-the-spot availability.

1 c. rolled oats
1 c. flour
1 c. brown sugar
1 tsp. cinnamon
1/2 c. butter

Mix dry ingredients. Using a pastry blender, cut in butter. Mix well until it becomes a nice crumbly texture. Set aside.

Fruit:
6-8 cups peaches, peeled and sliced
1 c. blueberries (fresh or frozen)
sugar
corn starch

To quickly peel peaches, drop in boiling water for about 30 seconds. The skin will peel off easily. Slice and place in large casserole dish or 9x13 pan. Toss in blueberries. Sprinkle the fruit with a little sugar and cornstarch.

Poor crumbly topping over fruit. Bake at 350 degrees for 30-45 minutes until topping is golden brown. Serve warm.

A delicious fruity summer dessert.

Add a scoop of yummy French Vanilla ice cream and enjoy!

We've had a week full of Back-to-School excitement!

We carried in big, heavy Target bags full of supplies to our school to fill our desks and meet our teachers!

We also took special gifts for each of our teachers!

(Thank you, Pinterest, for another fantastic idea!)

Our teachers were full of cheerful smiles and friendly hugs!

We were ready for the first day of school now!

Cloe was all smiles on her first day of 3rd grade!

Excited to break in our new shoes for P.E. on the first day!

Cloe already loves her teacher!

(Yes, she is beautiful and my days of drop-off in pajamas are probably over!)

Brothers will always be best friends!

They dressed alike so they could easily find each other at recess!

McClain was all smiles!

After school, he said his tears only spilled once at school.

Carson was all smiles, too!

He said school was not what he expected--they didn't even learn to read yet!

We made it!

Our boys start kindergarten this week.

Quite frankly, I'm a mess.

I'm not afraid of letting them go to school. It's time.

No. I'm anxious for their confidence in going to separate classrooms, their success in learning, their new relationships with friends and teachers, and the choices they will make in loving God.

You are the sweetest baby!

Not an hour during the day goes by without one of them wanting to hold or kiss you!

You've gotten use to being on a schedule and sleep pretty well at night!

How we beat the heat!

What a hot week!

The kids spent Monday playing outside in our little plastic pool.

They had a blast!

However, the sun was a little more intense that we realized.

Cloe and McClain ended up with sunburned backs.

That canceled out pool fun for a few days.

So, I hit up my most favorite new-to-me site: Pinterest!

Seriously, sooo addicting!

I'm almost thankful for nighttime feedings so I can gaze at the endless scrolling pictures of delicious food, beautiful home decor, projects for the kids, and much more! (I still miss sleep!)

We found this clever, yet easy project and got to work!

All the kids laid on Cloe's art paper roll and I traced their little bodies.

I hung the paper bodies in the hallway while the kids gathered art supplies.

They got to work coloring and decorating their look-alikes right away.

I retreated to the couch to stare at this little guy some more...

The kids colored and colored and colored...seriously, such a nice looooong project!

They kept sharing little compliments with each other while working.

Ta-da!

McClain made his face red to represent his sunburn. Poor guy!

Cloe fashioned a new dress.

Carson went the scientific route and drew the inside of his body.

I think the best part of this project was seeing their little creative imaginations at work.

They love their look-alikes and want to hang them in their rooms!

This little project could technically be a Thrifty Thursday post...but I'm simply too tired to figure out what number it would need to be. Hey, at least I've got the day right!

The vacation that feels like a lifetime ago...

One month ago, we left on our family vacation to Colorado!

It certainly feels like a whole lifetime has since passed!

We had so much fun together!

Day 1: Our first stop was the American Girl Store near Denver.

Cloe had saved up money and wanted to purchase Ruthie, Kit's best friend.

The Lone Tree Mall area was beautiful.

It made for a great first day of vacation!
(I know--we were near mountains and Cody took us shopping! He really loves his girls!)

Day 2: we hooked up with Grandma and Grandpa in Colorado Springs.

We walked around the beautiful Garden of the Gods.

These rocks are such an awesome reminder of the vast creativity God used in designing our world!

Grandpa and Grandma even hiked up some rocks!

Carson loves to be the king!

The first time we were here together was in college.

Crazy the changes that happen over 15 years!

Next we drove to the top of Pike's Peak.

The Park Ranger offered me medical services for delivery...just in case!

The drive felt crazy intense to me with it's sharp curves and drop off shoulders!

Day 3: we road the Royal Gorge Railway.

The train ride was so relaxing as it followed the Colorado River.

The boys especially loved the train.

McClain is the most squeezable kid!

We still had some daylight left after our trip home from the train ride,

so we headed to the Air Force Academy Chapel.

This chapel is so unique!

The stained glass windows made beautiful rainbows.

Day 4: we decided to check out some mountain trails!

In college, we hiked up Mt. Cutler several times.

It's a moderately easy trail that overlooks Seven Falls.

(I say "moderately easy" for the non-pregnant. I decided it would be best not to induce labor on the pretty little trail, so I waited at the bottom.)

The kids were happy little hikers!

Our next stop of the day was one that had been greatly anticipated by the kids:

Whit's End.

Our kids love listening to Focus on the Family's Adventures in Odyssey.

The whole lower level of Focus on the Family has been turned into the town of Odyssey.

There were so many rooms to explore--the dress up room was a huge hit!

The best part of our visit was having an ice cream treat at Whit's End!

Day 5: we did a little shopping in Old Colorado City and then...

Cody and I had a lunch date in Manitou Springs!

(little did we know this would be our last date before baby!)

I love him!

Day 6: we took a trip to Boulder to check out the Pearl Street Mall.

The street performers were pretty captivating!

The best part about this performer...

she was right in front of the most incredible kitchen shop!

Kids watch : Mom shops!

We took a little scenic drive through the mountains near Boulder.

The elevation started doing funny things to my baby belly, so we headed back to Denver.

Dinner as Casa Bonita!

The kids loved the high diver and the roaming musicians!

Day 7: We went to church at an Acts 29 church plant near downtown Denver.

I so admire the families willing to step out and plant a new church!

This house was across the street from the church...so charming!

Day 8: We spent the day at WATER WORLD!

The kids LOVE water parks, and this one boasts being the BEST in America!

The flowers were all in bloom and so pretty!

World's Best Dad!

He took the kids (plus Grandma) on tons of slides and rides!

The next three days, we were at a conference in the Denver area for our church.

I felt pretty miserable and didn't catch any pictures.

We did have a great time hanging out with college friends and their kids.

By Thursday, I was afraid we were going to have a Colorado baby, so we took off early and headed straight home. Thankfully, baby waited to come until all the vacation laundry was finished and Cody had the baby nook completed!

Nothing like packing it all in to Summer 2011!

Pssst...next year's family vacation: somewhere on the EAST COAST!

He's Here!

At 6:11 pm, Maddox Andrew made his first appearance into the world! It wasn't exactly how we thought it would all play out, but, none the less, our baby came out with a strong, healthy cry.
After sitting around dilated at 3 for.ev.er, Maddox's heart rate decided to linger too low for too long. The calm quickly turned to quick movements and bright lights. Thankfully, I was never scared or fearful the whole time. That "peace that passes all our understanding" is one pretty awesome thing God gives!
It's all sort of a clear blur--not that that really makes any sense. I knew what was going on and could feel things, yet there was absolutely no pain. Pretty surreal! His cry was the most beautiful sound and I was so thankful it went on and on since I couldn't see him while they suctioned and cleaned him off.
Cody got to cut the chord and be involved in everything. I, oddly, laid on the operating table and took an in-and-out snooze while they closed me up.
Finally, I got to kiss my precious baby boy's little soft head!
I was super loopy for several hours, so it was quite late before I actually held him. That was totally fine though. I enjoyed seeing our children, the grandmas, some family and friends all soak in our little guy!

Some cutesies of Maddox:
He grunts and sighs while he sleeps.
His skin has the softest little rolls all over.
His head has more of the darkest hair than any of our children had.
His cheeks are chubby and so kissable.
He's quite the cuddly baby yet is sleeping very content in the bassinet.

Can't believe how baby #4 has gone from feeling like a dream to being more than we ever could have dreamed.

Baby Day!

Well, turns out those billion trips to the bathroom last night weren't because of drinking too much water. After facing the dreaded embarrassment that I may have had an "accident", I called the doctor and headed in for a visit. Turns out my water really had ruptured!
And now we're just waiting and waiting and waiting and waiting.
The epidural came at just the right breaking point for me! Baby's heart rate is being a little funky, so we're watching (and praying!!!)!
Hopefully we'll have pictures with a time, weight, and length soon!
Come on, Baby!

A Quick SOS

**UPDATE: It's over! Thank you for praying! Everything went well...and sort of long! Oops! God completely took control over my nerves and the baby discomfort. I'm so thankful!**

I had every intention of giving little updates throughout the last week.

We enjoyed a super fun vacation in COLORADO!

Now we're at a conference.

Could I send out a quick prayer request?

Tomorrow morning, I'll be doing a workshop on Balancing Family and Ministry.

PLEASE pray that I'll be able to have clarity of thought and discernment of speech.

Last week, any purchase made using a GAP card received an extra 40% off! We picked up a lot of extremely adorable clothes for baby boy for under $2! The boys scored new tennis shoes for $4 a pair, and Cloe got a beautiful fluffy skirt and cardigan for less than $10 for the outfit!

This weekend, GAP has an extra 50% off women's clearance. Watch out for those highlighted price tags! They are a final sale (so try on before buying), but the prices are rock bottom!

The hefty sums on regular priced clothing at GAP can be overwhelming, but hang in there and head to the back of the store! Large clearance racks are filled! Be patient and you'll find yourself a steal of a deal!

Today was t-shirt day, so I tapped deeply into my crafty side...

After VBS, swimming lessons, and a trip for groceries, I was at that "no energy" stage.

The kids were so helpful in carrying in and putting away the groceries, picking up around the house, finding a healthy snack and playing very contently outside.

Can you spot my monkey in the tree? I had to keep reminding him...that's high enough!

The kids also adopted two baby bunnies. I told them they shouldn't touch the babies. So what do their creative minds come up with? Why wrapping the bunnies in leaves and then picking them up. Technically they weren't "touching" the bunnies. Oh my. Sometimes they are not my children. I could never even bring myself to touch a bunny through a leaf much less actually desire to pick one up! They had a blast and the babies happily hopped off later.

So here's the favor I need from you!

Awhile back, I made this special Berry Pie for our family. Later on, I submitted it to Sweetopia's Sweet of the Week Contest really thinking that it would never even get a second glance, but maybe it was worth a shot.

Did you know it's National Donut Day?

It was also the last day of school for Cloe.

So we decided to CELEBRATE!

"Homemade" Donuts...all fried up!

We heated up some oil and threw in some refrigerator biscuits with a little hole cut in the middle. (Yes, classy!)

Once they were golden brown, we flipped them and cooked the other side.

We patted off the excess grease on paper towels.

And rolled our piping hot donuts in powdered sugar...

...or regular sugar.

Mmm...tasty!

Finger licking good! (Enough grease and sugar to last us for quite awhile!)

We took our obligatory "Last Day of School Picture" on the front steps...can't get enough of our pretty girl!

The boys wanted to kiss their sister before she left! Hope they always adore her this much!

Last day of parent drop-off...

I couldn't help but notice as we celebrated Donut Day, the last day of school, and the arrival of summer vacation, that the American flag was at half mast. While this day marks one of the "best" days in a kid's life, it surely marks one of the worst days in some family's life as they bury their soldier. Praying for those families today who have suffered a great lost and praying for our soldiers that are still serving...

Last week, Cody traveled to Chicago for a conference.

It was just me and the three amigos...on our own!

I have to admit, I was feeling a little overwhelmed when Cody left on Monday.

My energy is around 75% these days, and the kids' energy is around 300%.

It's not the best combination.

However, the kids totally stepped up.

They made their beds everyday, picked up their clothes and toys, and just obeyed magnificently.

The days went by quickly.

The nights on the other hand...

My lovely neighborhood turned into the ghetto.

I propped chairs in front of every door as my security system.

I slept with my phone in hand, ready to dial 911.

We left lights on all over the place.

Every noise woke me and had my heart pounding.

Anywho...now you know I'm a little crazy...

The weather provided several chilly rainy days that just begged for some comfort food.

We have to enjoy our mushy, casserole-ish foods while Cody is gone.

This recipe was a perfect fit for both needs!
Delicious!

Try it on the next rainy, chilly day!
(but not today when it's 81...you'll melt!)

Chicken "Pot Pie" with Crunchy Brown Rice Crust
(LOVE Whole Foods for this easy gluten free recipe!)

1 tablespoon vegetable oil, plus more for greasing (I used olive oil)
1 tablespoon butter
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces (I used 1/2 pound)
1/4 pound sliced button mushrooms (I omitted these)
2 teaspoons chopped thyme, divided
1 large carrot, chopped (I used 3 large carrots)
1 rib celery, thinly sliced (I used 3 large ribs of celery)
1 small yellow onion, chopped
Salt and pepper to taste
1/4 cup brown rice flour (or unbleached white flour if you don't have rice flour)
1 1/2 cups low-sodium gluten-free chicken broth (regular broth works, too)
1 cup whole milk (I used 1% milk)
1 cup cooked brown rice or brown and wild rice blend
1/4 cup shredded Parmesan cheese
1/2 teaspoon sweet paprika
1/2 cup frozen peas (I used a whole cup)

Preheat oven to 400°F. Lightly grease a 9-inch pie dish with oil; set aside.

Heat oil and butter in a large skillet over medium high heat. Add chicken and cook, stirring occasionally, until no longer pink, 4 to 5 minutes. Add mushrooms, 1 teaspoon of the thyme, carrots, celery, onions, salt and pepper and cook until just tender, 6 to 8 minutes.

Add flour and cook, stirring constantly, for 1 minute. Add broth and milk, stir well and bring to a simmer. Reduce heat to medium low and simmer until very thick, about 10 minutes.

Meanwhile, combine rice, cheese, paprika, remaining 1 teaspoon thyme, salt and pepper in a medium bowl.

Stir peas into chicken mixture then season with salt and pepper and transfer to prepared dish.

Scatter rice mixture evenly over the top then arrange dish on a baking sheet to catch any drips. Bake until bubbly and crust is crisp, about 30 minutes.

The thyme added so much flavor!

Sort of wish we had just one more helping of leftovers!

Don't forget...chairs save lives.

Thrifty...gone wrong!

Last week, I was attempting my hand at a little EXTREME COUPONING.
(You may have already heard this story...I ~~always~~ sometimes have a problem with repeating myself.)

Cody was out of town, so I took a whole evening to scour blogs, print coupons, make lists, and prepare my strategy for a major couponing trip to Target.

MY MISSION: 1/2 price groceries.
MY TACTIC: a long detailed list and an envelope FULL of coupons.

It took literally FOR.EV.ER to match up all my coupons and stacked coupons with the correct items.
Like two hours of my life I'll never get back.
I may have been having a horrid hot flash by the time we hit the checkout.

The boys had been more than super amazing and well-behaved.

We were in the home stretch.

Friendly cashier...check!

Everything ringing up correctly...check!

Coupon scanning...commence!

Suddenly the anticipated great release of joy like balloons and confetti falling that comes after a successful couponing trip was interrupted about three coupons in (out of like 100 coupons) by this horrible whining voice.

It started ever so subtle and quiet.

Just some dude behind us waiting in line singing, "Baby, baby, baby...oh baby".

The droney whine continued with the same phrase over and over and over, but I quickly just passed it off as a guy with a song stuck in his head.

That is, until I felt the awful, nasally voice getting a little closer. {Shudder}

I finally turned to take a subtle glance at the horrible noise making man and realized he had moved into my comfort zone (unwelcomed!) and was now pointing at my baby belly while droning on and on and on. {Super Shudder}

It didn't stop there either. Soon, the overly confident man had full creepy swivel hips in motion and a very disconcerting circular hand motion extremely too close to my baby belly all going along to his continued whiny, off pitch drone of "Baaaabeee, baaaabeee, baabeeee, oooooohhhh baaaaaaaabee."

AUGH! At that instant, I so wished I had some fierce background in karate or kung fu.
Everything in me wanted to level the creepy dude.

But, alas, I was frozen and left completely defenseless and speechless.

It was so stunning and unnerving, I couldn't utter a single word.

I looked at the store clerk for help.

She looked back at me completely bewildered by the situation.

She started scanning coupons faster and faster. On items "free with a coupon", she just quickly punched in random numbers that seemed close enough.

We were both completely speechless and stunned. (and creeped out!)

Normally, my super frank boys would have been full of loudly voiced questions about the unique fella behind us and his odd actions, but not today. They could only stare with bewildered looks on their faces. What was happening? What was that singing? What was that movement?

No one knew. It was seriously beyond our wildest imaginations into the weirdo realm.

Thankfully, the last coupon was eventually scanned. A small sigh may have escaped from me and the clerk as a I quickly swiped my credit card.

The receipt was quickly printed and stuffed into the bags that were being haphazardly tossed into the cart.

I grabbed the boys' hands and our cart.

Without looking back, we hastily hit the door.

The singing faded. The creepy dude faded into the distance behind us.

We survived and were free!

It may be quite some time before we attempt the extreme couponing trip again...I don't think my ears or my baby belly can take the apprehension of running into Creepy Baby Baby Man again!

By the way...we did save $94 in coupons. Not sure you'll be able to convince me it was worth it for awhile!

Baby Baby Baby

Today we to the hospital to visit friends who had a precious baby boy yesterday. I think I had forgotten the amount of sweetness that just exudes out of a brand new baby. Whew! Too cute!

(I also had flashbacks of the labor pains...oh, so not ready for that yet!)

It's beginning to really sink in for the boys just exactly what's going to be joining our family in just eight weeks: A BABY! A teeny, tiny sweet little baby!

As we got off the elevator, McClain grabbed my hand and said, "You better use your purse to hide our baby."
I asked him why.
"They might want to take the baby out of you, and dad's not here!"

Carson just wanted to know how they were going to get the baby out...anyone want to volunteer to explain that to him?

(I prefer stork language, okay?)

I'm still sorting through whether this is an actual spiritual gift or more of a Baptist talent.

Last week, I made a Fluffy Dessert to share with our college and single kids that come over on Sunday nights.

They liked the fluffy dessert!

Sure, I could add years to their lives by preparing healthy, nutritious snacks, but those, somehow, never get eaten. Ahem.

So, I tap into the gift and make the fluff.

Berried Delight

1 1/2 c. graham cracker crumbs

1/4 c. sugar

1/3 c. melted butter

8 oz. cream cheese, softened

1/4 c. sugar

2 T. milk

2 c. whipped topping

2 pints strawberries

2 small packages instant vanilla pudding

3 1/2 c. milk

8 oz. whipped topping

Combine crumbs, sugar, and butter. Press into a 9" x 13" pan. Chill 15 minutes.

Beat cream cheese, sugar, and milk until smooth. Fold in 2 c. whipped topping. Spread over crust.

Top with strawberries, hulled and halved.

Prepare pudding with 3 1/2 c. milk. Pour over berries. Chill several hours or overnight.

Before serving, top with 8 oz. whipped topping. Garnish with a few strawberries.

So, how about it...do you have the gift?

Thrifty Tip #66: Eat BEANS! No, seriously, black beans, pinto beans, kidney beans, mung beans, great northern beans...legumes...eat them! They are SUPER inexpensive and full of protein! Beans pair well with tons of other vegetables, meats, and rice to make quick, easy, and low cost meals!

Here's a new favorite dish at our house!

Black Bean Salsa

(Thank you Instagram for making my pictures look prettier.)

3 c. black beans (equal to 2 cans)
2 tomatoes (diced)
1 green pepper (diced)
1 bunch green onions (chopped)
2 c. corn (I used frozen corn and ran it under hot water first)

Dressing:
1 tablespoon minced garlic
1 tablespoon Cajun seasoning
1/3 cup olive oil
1/3 cup red wine vinegar
1 teaspoon black pepper

Whisk dressing ingredients well and pour over vegetables. Chill and serve with Blue Corn Chips!

Got leftovers? No problem! We turned this salsa into the most delicious lunch!
I loved it but was even more surprised at how much the kids loved it!

Black Bean Salad
Prepare 1 c. brown rice (I used 1/2 c. brown and 1/2 c. red jasmine rice that I got on a whim in the bulk aisle!). Rinse with cold water until cooled. Mix with leftover salsa (about 1/2 the batch) and serve.

...when you're having a baby!

This last Sunday at church, I told several people I had just 12 weeks left until this baby would be arriving.

Well, evidently, I've lost the ability to keep track of time.

Today, I was so surprised when the doctor said, "Well, here we are at 31 weeks. Just nine to go!"

NINE WEEKS. Wow. Where did the last three weeks go?

Crazy!

We're so thankful for all the "pieces" that are falling together to get us ready for this baby:

*Lots of help with the reworking of plumbing and electricity in the basement for a new laundry space
(Thank you! Thank you! Thank you!) I'm sure the baby will love his "closet" dwelling space!

*A steal-of-a-deal crib and a *free* mattress (Thank you!!!)

*All sorts of awesome baby equipment passed along by sweet friends (Thank you! Thank you!)

*A new-to-us vehicle that will fit our whole family

*A closet full of diapers thanks to a deal-grabbing friend and my mom (Thank you!)

*A tote full of the sweetest little baby boy clothes passed on from generous friends (Thank you so much!)

I totally need to get some of that vitamin that helps your memory out...but I can't seem to remember what it's called!

Yesterday, I spent an embarrassingly crazy amount of time looking for this recipe...

...had I seen in on a blog?

...in an email?

...where, oh where?

I could not remember.

...was it in a magazine?

...or in a link on twitter?

After sorting through foodie emails, blogs, twitter feeds, and magazines, I finally just gave up and decided to glance through my new Everyday Rachael Ray Magazine.

Well, crazy enough...it was right there on page 106.

Seriously.

I had used some deductive reasoning for not checking that magazine first...Rachael Ray is a self-proclaimed cook, not baker. She certainly wouldn't have this recipe.

Or, yes, she would.

Thankfully, I had just enough time to throw this together before we had to get Cloe from school.

Pie recipes often seem daunting, especially the crusts.

But this one was so easy...not to mention completely delicious!

Rachael Ray's Rustic Tri-Berry Pie
(we made a Bi-berry pie...)

3 containers (6 oz. each) blackberries (about 3 1/2 cups)
(we substituted 3 cups extra strawberries and 1 cup extra blueberries)
1 c. sugar, plus more for sprinking
1/4 c. quick-cooking tapioca (we substituted pearl and it worked great!)
2 T. fresh lemon juice
8 oz. strawberries (about 2 cups), halved or quartered
1 container (6 oz.) blueberries (about 1 1/4 cup)
1 1/2 c. flour
1/4 tsp. salt
1 stick (8 T) plus 2 T. cold unsalted butter, cut into small cubes
1 large egg, separated
1/4 c. ice water (more as needed)

In a large bowl, combine 1 c. blackberries (or blueberries), 1/4 c. sugar, the tapioca, and lemon juice; mash with a potato masher.

Stir in the strawberries, blueberries remaining blackberries (or strawberries) and 3/4 c. sugar. Let stand for at least 20 minutes, gently stirring once or twice.

Meanwhile, position a rack in the lower third of the oven and preheat to 400 degrees.
In a large bowl, whisk together the flour and the salt. Add 8 T. butter and use a pastry blender to cut the butter into the flour until crumbly. Continue working with your fingertips until the mixture is flaky.

In a cup, combine the egg yolk with 1/4 c. ice water. Drizzle over the flour mixture and stir with a fork until incorporated and the dough is slightly moist but not wet. (sprinkle more water as needed--I added about 3 tsp)

Transfer the dough to a lightly floured surface and, with a lightly floured rolling pin, roll out to a 13-inch round. Roll the dough up onto the pin and unroll over and into a 9-in. pie plate. Center it and let the excess pastry drape over the edges. Gently press the dough into the pan.

Spoon the berry mixture evenly into the pan, making sure to pour in all the juices that have collected in the bowl.

Dot the top with the remaining 2 T. butter. Gently fold the pastry up over the berries, pleating as you go around.

In a small bowl, beat the egg white with a fork until frothy. With a pastry brush, lightly glaze the pastry all over with the egg white. Sprinkle the dough with a few pinches of sugar.

Bake the pie until the berry filling is bubbling well, about 1 hour. (55 minutes for our pie)

Let the pie cool completely (or just slightly, if you're impatient) before cutting.

Serve with generous scoops of ice cream!

You'll have very pleased customers!

(They're all in their pajamas and have wet heads...pie was the perfect motivation to speedy things on up before bedtime!)

Thrifty Tip #65: Before paying the high prices of sewing patterns, check the internet for quality free patterns and tutorials! Here's a free apron tutorial to get you started!

**Disclaimer: I am not a highly skilled seamstress and do not claim to be one! This is the world's easiest project. You will scoff at my sewing ability and this lacking tutorial...I'm okay with that.**

#1: Start with 2 square pieces of fabric; this can be 2 coordinating pieces or 2 of the same pattern. I chose to make my squares 22.5 inches on each side because the fabric was 45 inches wide and I could just cut the piece in half.

#2. Place fabric right sides inward and pin carefully around the square to hold in place.

#3. Sew around the edges of the square with about a 1/2 inch seam and also leaving about a six inch opening to be able to turn the square right side out.

This may be a quick process or it may take for.ev.er....depending on the mood that your bobbin case is in. Mine was in a funk. But I still won!

#4. Before turning the square right side out, carefully iron the seams open. This will help you have clean edges and seems.

#5. Once square is turned right side out, carefully iron edges again. Use a small hand stitch to close up the square. (or have just my mom do it...she's better at it anyway!)

#6. Fold down one corner of the square approximately 7 inches on both sides. Iron well so it stays flipped down. Hand stitch a button in the middle to hold it in place.

#7: For the neck strap, cut approximately 15-18 inches of grosgrain ribbon (depending on the size of the child). Sew on another button--using it to also affix the ribbon to the backside of the apron. On the other side, sew on a button and use that button to affix a small velcro tab on the back. Simply affix the other piece of the velcro to the ribbon.

# 8: Cut 2 more pieces of ribbon approximately 15-18 inches each. Use a simple top stitch on your sewing machine to attach these halfway down from the top of the apron's fold. (If you're a really savvy seamstress, you can pin these in place while doing the first stitching around the square so no stitches will be seen.)

VOILA! A simple apron and fun take-home gift for birthday parties!

Cloe loves to wear her apron for cooking or painting!

Our family day at the Pella Tulip Festival was FANTASTIC!

The tulips were in beautiful, full bloom!

The weather was perfectly warm and sunny! (perfect for somersaults, flips, and cart-wheels!)

The kids were so enthusiastic! (and obedient!)

The parade was nice and relaxing! (and brought out our little patriot)

The Dutch food was Dutchy good!

The Dutch pastries were deliciously filling! (as exemplified by Carson's showing of his "full tummy")

The Tractor Rodeo really brought out the brotherly love...for John Deere Tractors!

The Scholte Gardens provided a lot of photo ops for the little princess and her princes!

It was the **perfect** day!

A Day Late and a Dollar Short...

I've noticed that the really good bloggers always provide their creative ideas and enthusiastic tutorials
ahead of a special holiday.

This blog works more along the lines of "here's what we did and I'm just going to document it so I don't forget".

Okey Dokey?

Here's a little look at the special treats we made for Teacher Appreciation Week and Mother's Day.

**Tin Can Treats**

1. Start with a pull tab can. This can was 77 cents at Wal-mart. I was really surprised at the range of price among all the grocery stores--some were well over a dollar! Next time, we'll be buying a case at Costco where they're 65 cents.

2. Use your can opener and cut off the BOTTOM of the can. Empty fruit (or whatever is in your can), wash and dry thoroughly.

3. Fill can with the favorite candy of the person you'll be surprising. (Cloe's teacher loves Hot Tamales and Swedish Fish.) The $1 boxes of candy just barely filled the cans. Just an FYI: this would be a little spendy to use M&M's.

4. Cut a strip of paper just wide enough to cover the can and long enough to wrap around. Glue or tape it on the can.

5. Stuff a little tissue paper in the bottom. This will help to fill up your jar and provide a little protection for the candy from the next step.

6. Take a hot glue gun and run a little glue around the inside edge of the can. Press bottom firmly back on the can. (The original creator put the glue right on the lid, but this way worked better for me.)

7. Glue on a cute little label printed from Our Best Bites. Tie some pretty ribbons on the tab. Voila!

Aren't these so cute? I'm just crazy impressed with the creativity rolling out of blogs these days! (not mine...the one's I copycat!)

While I'm posting a recipe full of chocolate and coconut goodness today,
our family is actually enjoying the BEST DUTCH PASTRIES around at the Pella Tulip Festival!
These Dutch people seriously know how to make the most amazing mouth-watering, almond filled, buttery and flaky pastries. Wish you were with me to enjoy these treats!

These Almond Joy Bites will have to suffice as a "second best" treat for today! Trust me, though...they'll do!

This recipe is from Confessions of a Cookbook Queen. Love her creative goody recipes!

Almond Joy Brownie Bites

Brownie batter (homemade or from a boxed mix)
4 cups sweetened shredded coconut
14 oz can sweetened condensed milk
About 4 dozen almonds

Chocolate candy melts or almond bark

Preheat your oven according to brownie recipe directions and generously spray two mini muffin pans with nonstick spray. (I used mini-muffin paper liners.) Fill cups about 1/2 full with brownie batter and bake according to directions. When brownies are done, place pans on a cooling rack and remove brownies once cooled completely.

In a medium bowl, combine coconut and sweetened condensed milk. With clean hands, roll coconut mixture into balls and press onto tops of brownie bites. Press an almond into the top of each. Place brownies in the freezer to harden for about 15 minutes. (This is the the most important step! Be sure to let these freeze long enough to completely harden!)

Melt almond bark or candy melts according to directions. Remove brownies from freezer and dip the tops in the chocolate. Place dipped brownies on a wax paper lined baking sheet and refrigerate until chocolate is set.

Last week, I caught the crazy "Let's have a garage sale" bug! With two guys down and stuck at home, I thought it'd be the perfect time to purge the closets and clear things out! It was also our only free Saturday for like the next...um, season? It got a tish crazy getting things ready and it definitely could have been a little more organized. However, we set a goal to sell enough to purchase a twin mattress for the boys' top bunk bed and stroller for the baby--and WE MADE IT! A successful garage sale is definitely worth the crazy rush of work! Next time, though, I don't think I'll have a garage sale when my husband isn't able to lift! After a zillion trips up and down the steps with full totes and bins and having only the help of an eight year old to set up the heavy tables, my pregnant body was really screaming for a break! It's done now...profit is in the bank! (for now!)

Thrifty Tip #64: Follow these handy tips from Fox Business and All You for a successful garage sale!

Make sure you have enough items to sell. If you only have a small collection of items, you may be better off donating them to a charity. If you're set on selling, team up with friends.

Be wise about how much you charge. Price your goods at around a quarter of their current retail cost. Using a thick black marker, write the price on a sticker and affix it to the sale item (don't write directly on your merchandise). After an item sells, remove the sticker and place it in a notebook to help keep track of profits. Make sure you have a safe place to keep change: You'll need at least $100 worth of coins and bills, especially small bills.

Price everything beforehand. Shoppers will feel more comfortable at a sale with prices that are pre-determined, so that they don't have to consult you each time they are interested in buying an item. If you don't have the time to price each individual item, like small trinkets, set up a table where everything is $1 or $2. *Think bulk: customers are probably only going to have around $30 to $50 cash in their pockets, and you want them each to walk away with six things! Don't hesitate to price things so you can make deals.

Organize, organize, organize. People attending garage sales know they are looking at used items, but that doesn't mean they don't want to shop in an orderly, attractive environment. For example, clothing always sells better when displayed on a garment rack, and cleaning things goes a long way. Keep it looking like a store—replenish tables with other items after selling things to keep it looking full. Also, make sure you have bags and newspaper to wrap up the items you sell for customers.

Schedule to draw crowds. Plan your sale for a Saturday, when people have time to stop and shop. Mornings and early afternoons tend to bring in the most profits, so start around 8 or 9 a.m. Since early birds may come by sooner, set out display tables the night before so you can stock them quickly in the morning.

Advertise. Getting the word out there is half the battle. List a garage sale on Craigslist, use social media and hang signs around the neighborhood.

Have a clean-up plan. Make sure you know when you plan to close up shop at the end of the day, and make sure you have enough people to help you. Also, have a plan of action for the items you didn't sell.

Have fun. Make your garage sale a place where customers are drawn to, with music and a lively atmosphere. If you're big on social media, live tweet or take pictures. *We make it fun for our family by always going on a yummy donut run!

A Royal Fat Friday!

Did you catch the Royal Wedding?

It was so beautiful!

I have to agree with some friends' facebook comments: how awesome to have a day to celebrate the marriage of one man and one woman! Love it!

And that cake...wow!

Of course, I really don't think it's quite as beautiful as Amanda's Royal Wedding Cake over at I am Baker! Wish I could have scored myself a piece of that beauty!

Isn't she talented? I love those roses!

I didn't attempt a wedding cake, but this Stuffed French Toast is a little royal treat we enjoyed at our Easter brunch.

It felt even more royal reheated with a cup of tea!

Raspberry Stuffed French Toast with Custard Sauce

4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, softened

1/2 cup sugar

2 tsp. vanilla

1 tsp. ground cinnamon

2 whole eggs

2 egg whites

1-1/4 qt. (5 cups) fat-free milk, divided

1 loaf French bread (16 oz.), ends trimmed, cut into 18 slices

1 pkg. (12 oz.) frozen unsweetened raspberries

1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding

BEAT first 4 ingredients in large bowl with mixer until well blended. Add whole eggs and egg whites, 1 at a time, mixing well after each. Gradually beat in 2 cups milk.
ARRANGE 9 bread slices on bottom of 13x9-inch baking dish sprayed with cooking spray; cover with half the berries and remaining bread slices. Pour Neufchatel mixture over bread. Let stand 30 min.
HEAT oven to 350°F. Bake French toast 40 min. or until golden brown. Meanwhile, bring remaining milk just to boil in saucepan; gradually add dry pudding mix, whisking until well blended. Remove from heat; let stand 5 min. Meanwhile, microwave remaining raspberries in small microwaveable bowl on HIGH 15 to 20 sec. or until warmed.
SPOON pudding over individual servings of French toast; top with berries.

Make Ahead

Assemble casserole as directed. Cover and refrigerate several hours or overnight. When ready to serve, bake, uncovered, at 350°F for 40 to 45 min. or until golden brown. Meanwhile, prepare custard sauce and raspberry mixture. Serve as directed.

Late Night Lollygagging with Londa

I really need sleep, but Carson gets more pain medicine in 30 minutes...so I'll wait.

This week has been CrAzY!
Nothing terrible, just a lot of things!

Thankfully, we started out the week with a day off of school for Cloe.
Everyone slept in--Carson won! He didn't make an appearance until 10:00! Every Easter Sunday should be followed by a day off!

Tuesday, we started off the morning bright and early at 5:15!
Cody has had a hernia for several years, but it seemed to escalate during the winter. He was thrilled to have this little surgery. {sarcasm}

At the surgery center, we ran into a family that we know. The husband was asking Cloe what her daddy was having surgery for. Cloe replied, "I don't know but it's something with his (in a whisper and pointing down) p.r.iv.a.t.e.s." Later, I did some quick explaining about muscles and sides...you know, before she went to school and told her friends about her morning! Thankfully she lost a tooth at school, so she was completely distracted!
I really did (and still do) feel badly for how painful this has been for Cody! He was completely immobile on the couch for two days. I slept on the floor beside him in case he needed anything. Thankfully he's slowing feeling better!

Tuesday evening, my parents came into town with my brother. He's back in the states for a few meetings. They spent the night before his flight took off the next morning.

I think our kids especially enjoyed time horsing around with Uncle Mark!

Wednesday night at church, I had one of those, "Phew, maybe I'm not so old and out of style" moments!

This is my friend, Julie. She was in our youth group way back when, and now we're both expecting babies together. AND we were wearing the same cardigan! Julie is always oober cute and stylish...matching her just sort of made my night! (It's the little things, you know!)

While being laid up on the couch Wednesday afternoon, Cody had posted our Jeep for sale on Craigslist. Calls, texts, and emails came flooding in! The kids and I rushed home Wednesday night for someone to come over and look at it. Guess what! It SOLD! So now, we officially need to find that BIG car with enough room for this coming baby boy!

Thursday, we were back up bright and early again! This time, it was Carson's turn to head to the surgery center to get his tonsils and adenoids out. I just planned on taking Carson so Cody could rest a little more and stay with the other two. However, McClain could not handle letting Carson go, so he tagged along.

They were so stinkin' cute together! McClain kept holding Carson's hand patting his shoulder. Carson told the nurse he was "Crazy Scared." That made this overly-tired, emotional mama fight tears.

Thankfully, Carson quickly earned the affection of the whole staff at the surgery center. (I think it was because he was the only little person there with a bunch of geriatric patients!)

The anesthesiologist really took a liking to Carson and gave him the royal treatment walking back to surgery. Again, we're so thankful, everything went very well!

He wasn't thrilled to wake up, but once he realized his diet would consist of jello, pudding, popsicles, ice cream, Gatorade, and yogurt, life was good again! He's such a little trooper! Even all medicated, he just sat so wide awake. Of course, his sleepy brother enjoyed a nice long nap this afternoon!

And lastly...this is me and my quickly disappearing feet. Probably like my readers...disappearing quickly at the length and tediousness of reading this post.
BUT, guess what, time has passed. It's time for little boy's medicine and time for bed.
Wa-hoo!

Birthday Shenanigans

It's hard to believe that we have an eight year old at our house!

However, planning the birthday party for Cloe has never been easier!

This year, Cloe came up with a COOKING theme for her party.

She was full of helpful ideas and plans!

We thought it would be fun for all the girls to have an apron to wear while they cooked.

The girls also got to take their aprons home.

My mom came up with this super easy pattern a couple of years ago.

Just squares of fabric, buttons, velcro, and ribbon...maybe a tutorial will come later!

Cloe picked out her cake from some options we found at different websites.

This cake is from Parenting.

It was super easy--I even cut out one step and just baked the cake in an oval casserole dish.

We also made a special CLOE banner!

Just waiting for our guests to arrive!

We started out with pizza making!

(Thank you, Trader Joes, for having 99 cent dough!)

There were some pretty interesting pizza creations!

While the pizzas baked, Cloe opened her presents.

She got some of the coolest girlie gifts!

Sort of made me wish I could be eight again!

The girls were pretty satisfied eating their own pizzas!

Next, it was cookie decorating time!

I found the adorable idea for Funny Bunnies from Munchkin Munchies.

The girls used my edible markers to draw their own bunny faces.

They were a huge hit!

Next we decorated cupcakes.

The girls could choose to decorate an Easter basket, a marshmallow flower (like on the cake),

or an Easter bunny.

Thankfully, all the girls' cupcakes turned out super cute.

We tucked them in little boxes to take home.

Then it was cake time!

Happy Birthday Sweet Cloe!

We love you so much!

You always bring sunshine to our family!

Our Easter Weekend was packed full of fun and special times!

Friday afternoon, we picked up Cloe from school and headed to church to get ready for the Good Friday Service. It was a really beautiful, yet somber candlelit service. Because we were doing quite a few songs, the kids sat with a couple of our college girls. Thankfully, they did a great job staying focused. It's amazing how much they really do understand about the death of Jesus Christ as a substitution for the penalty of our sins.

Saturday, we headed back to church for the Easter Extravaganza. The kids all gathered to hear a great Easter story before running out to snatch up lots of eggs. Here's a link to video that was shown--it's totally worth watching!

It was a little chilly and super windy, so we had to layer up!

I think Carson was saying, "Ah man, all the eggs are gone already!"

McClain just tooled it up out there and hoarded a few more than his share of eggs.

It was a good lesson in generosity to look for kids who needed more eggs!

Some super nice people helped with a lot of fun and games in the gym!

Then...we ran home, quickly pulled our house together and hosted a birthday party for one special 8 year old and seven of her little friends...details to come in another post!

SUNDAY!

We just recently started having two services, so Cody and I were off to church by 6:45 am for practice.

Grandma and Grandpa helped get the kids all gussied up and brought them later.

After two awesome celebration services, we snapped a few quick pictures.

I know I'm totally biased...but I can't get enough of the cuteness and sweetness...

It was a completely exhausting but wonderful weekend!

So, it's Thrifty Thursday.
It's also the beginning of garage sale season!
Should be a very good thing, correct?
Bargains, treasures, free boxes: what could be wrong here?

Well, I'm in need of your wisdom this week. I'd love to have you share any opinions and advice on the following issues:

*Gas is currently quite expensive. Is it worth the cost of driving around to find the good sales? What limits will you set on how far you drive? How will you choose what garage sales to visit?

*The news stations have been reporting that bedbugs are becoming quite the problem. They warned people against buying things at garage sales because it could transfer bedbugs into your home. Will this stop you from going to garage sales? Will you take any precautions?

Rachael Ray's Pizza Pasta Salad

There's nothing like a good, hearty pasta salad to feed a crowd!

My good friend, Liz, brought this salad to church awhile back.

It was so unique and flavorful compared to other pasta salads I've made.

We made it for our small group from church, and it passed with flying colors!

Try it the next time you need enough food for a small army!

Supreme Pizza Pasta Salad
(recipe courtesy of Rachael Ray)

2 plum tomatoes, seeded and chopped
1/2 medium red onion, chopped
8 fresh white button mushrooms, sliced
1 small green bell pepper, seeded and chopped
1 stick pepperoni, casing removed and cut into a small dice
1 pound ball fresh mozzarella or fresh smoked mozzarella, diced
20 leaves fresh basil, torn or thinly sliced
1 pound wagon wheel pasta, cooked to al dente and cooled under cold water, then drained

Dressing:
1 teaspoon garlic salt
1 teaspoon dried oregano leaves or Italian dried seasoning
1 rounded tablespoon tomato paste
2 tablespoons red wine vinegar (eyeball it)
1/3 cup extra virgin olive oil (EVOO)
Freshly ground black pepper

Preparation
Combine tomatoes, onion, mushrooms, peppers, pepperoni, mozzarella, basil and pasta in a big bowl.
Whisk garlic salt, oregano or Italian seasoning, tomato paste and vinegar together in a small bowl. Stream in EVOO (eyeball it) while continuing to whisk dressing. When EVOO is incorporated, pour dressing over pasta salad, add a few grinds of black pepper to the bowl, then toss salad to coat evenly. Adjust your seasonings to taste and serve salad. Leftovers make a great lunch or snack the next day!

Some couples plan relaxing, tropical vacations for a "Babymoon".

We just seem to be hitting up every cool conference we can find!

This last week we were in Chicago for this amazing conference.

The music was led by Keith and Kristyn Getty--more cool Irish people.

Sandra McCracken, Sojourn, and Kevin Twitt were also there!

We also got to hear awesome preaching from D A Carson, Matt Chandler, Tim Keller, James MacDonald and other oober smart guys!

Other fun highlights from the week included...

amazing buildings, riding in taxis, trying out new restaurants, speed shopping with my good friend Liz, and lots and lots of laughing!

This is my favorite picture from the trip.

Although the thought and smell of coffee still makes me completely nauseous (thank you, baby #4),

this little barista was so fun to watch.

Everyone else raved at the coffee from Intelligentsia. If you get to Chicago, check it out!

So there you go...

...we're back home and ready to hit the road running with preparations for Easter and a special little girl's 8th birthday party!
